Chilli Sesame Seared Beef & Noodle Salad

Filling, fresh and flavour packed seared beef & noodle salad! Perfect for balmy evenings ☀️⁣

Serves 4⁣

Ingredients⁣

250g beef scotch fillet⁣
Flake salt, fresh ground black pepper⁣
1 tbsp olive oil⁣
100g thin rice noodles⁣
1 telegraph cucumber⁣
½ punnet grape tomatoes, cut in half⁣
2 handfuls bean sprouts⁣
1 large red chilli, seeds removed, finely sliced⁣
1 cup roasted cashew nuts, lightly crushed⁣
2 shallots, finely sliced⁣
½ bunch coriander, picked⁣
GOOD Oil Asian Dressing⁣
1 lime⁣

Method⁣

Place a small frying pan over a high heat and season the beef with salt and pepper.⁣

Add the oil and then beef to the pan to sear for approx. 1-2 minutes each side, depending on how you like it then transfer the beef to a plate to rest.⁣

Cook the rice noodles according to packet instructions, refresh, drain well, cut with scissors a couple of times to shorten then place into a mixing bowl.⁣

Cut the cucumber in half lengthways, scoop out the seeds the cut into shorter, thin baton pieces approx. 5cm long. Add these to the noodles along with the tomatoes, bean sprouts, chilli, shallots, coriander and cashes nuts.⁣

Season the salt lightly with salt and dress with the desired amount of dressing then toss gently.⁣

Slice the beef thinly and season lightly with a salt.⁣

Pile the salad onto a large platter, lay the beef over randomly and drizzle with a little more dressing. Garnish with extra coriander if desired and serve with lemon to squeeze.
