Curry Poached Fish - A one-pot winter warmer!
Curry Poached Fish sounds fancy and time-consuming, right? Spoiler alert - it's actually so simple because our good friend (and fuss-free queen) @everynightoftheweek dreamt up this simple, nutrition-packed, and damn delicious recipe just for you guys.
It's the sort of dinner you can whip up mid-week (especially if you have a jar of our
GOOD SUGO Napoli Sauce in the pantry), on the weekend or even those times when people pop in and hang around for dinner. It's a crowd-pleasing, family-friendly one-pot wonder that's GOOD for you and YUM. Does it get any better than that? We think not!
INGREDIENTS
Curry Poached Fish
1.2kg white boneless fish, cut into 6 pieces
5cm knob Ginger, grated
1 french shallot, peeld and finely sliced
1 jar GOOD SUGO Napoli Sauce
15 fresh Curry leaves
1 ts Curry powder
1 big handful of baby spinach leaves
Steamed basmati rice and papadums to serve
Curry mayo
1 jar GOOD FAT Mayo
A few springs of coriander
A few sprigs dill
1 small spring onion
All finely chopped is about 2tbs
1 ts curry powder
A squeeze of lime juice to taste.
Mix well, season w salt.
Pleace back in jar to store.
Keep in fridge for up to 3 weeks.
METHOD
1. Preheat a pan with 2 tbs of ghee over medium high heat.
2. Saute the ginger onion garlic mustard seeds and curry leaves until fragrant - 2 mins then add the
curry powder.
3. Cook for a further 1-2mins.
4. Lower the heat and add in the GOOD SUGO Napoli Sauce, then rinse the jar with 250ml of water and pour that in too.
5. Bring back to a simmer.
6. Place fish into the sauce and cover with a lid.
7. Poach for 10mins on a very gentle simmer until just done.
8. Serve w rice, pappadums, fresh coriander and curry mayo, YUM!!
