Nourishing French Onion Soup

INGREDIENTS

  • 2 tablespoons of grass fed butter

  • 1.5 kg onions, sliced

  • 4 garlic cloves, chopped

  • 2 teaspoons finely chopped thyme leaves

  • 1.5 litres GOOD BONES Beef Bone Broth

  • 2 bay leaves

  • Sea salt and freshly ground black pepper to taste

METHOD

  1. Melt the butter in a saucepan over medium–high heat, then add the onion and cook, stirring occasionally for 30 minutes until the onion is soft and beginning to brown.

  2. Add the garlic and thyme, reduce the heat to medium–low and cook, stirring occasionally, for 30 minutes until the onion is golden in colour and caramelised.

  3. Pour in the bone broth then add the bay leaves.

  4. Turn up the heat to bring to the boil and then reduce back down to low simmer and continue to cook for 50 minutes covered until the soup is bursting with flavour.

  5. Serve in bowls and finish with a sprinkle of fresh herbs and some crispy paleo bread ✔️
