Winter Greens and Sweet Potato Bone Broth

A simple winter warmer, perfect for getting your greens and bone broth nourishment for a strong immune system.

Make a big batch and enjoy it for a few days.

Simply sweat off some onion & garlic in a good amount of olive oil for a few minutes then add a spoon of tomato paste then some chopped zucchini, seasonal leafy greens like silverbeet or cavolo nero & some chopped broccoli.

Cook with a lid on for a few more minutes. Add 1.5L bone broth - chicken or beef - and cook, covered until the vegetables are tender, around 15 minutes.

Stir through some roasted pieces of sweet potato and adjust the seasoning with salt and pepper to serve.
