Chef Guy Turland's Marinated Chicken and Veg Skewers! (YUM!)

Here’s what Guy has to say about these delicious Marinated Chicken and Veg Skewers…

“I'm sure you've all had chicken skewers before, but have you ever tried skewers marinated in GOOD FAT Mayo? GOOD FAT Mayo’s natural, real ingredients hold the key to maximum flavor and tenderness. Real olive oil, garlic, and apple cider vinegar both tenderize and infuse loads of flavor into the meat, while the eggs create a creamy crust on the meat when BBQ'd like no other”


INGREDIENTS

Makes: 5 skewers
Difficulty: Easy

  • 500g chicken breast (or thighs)

  • 2 tsp salt

  • 3 Tbsp lemon juice

  • 3 garlic cloves, minced

  • ½ tsp ground pepper

  • ¼ cup fresh parsley, finely chopped

  • ⅓ cup fresh cilantro, finely chopped

  • ⅓ cup GOOD FAT Mayo

  • ⅓ cup olive oil

  • 1 zucchini, diced

  • 1 red onion, diced

  • 1 red capsicum, diced

  • 1 fennel, shaved fine

  • 1 bunch mint, leaves picked

  • 1 tbsp olive oil

  • 1 lemon, juiced

  • 1 tbsp pomegranate seeds

  • 2 flatbreads


METHOD

  • Dice your chicken into 1 cm cubes, mix in a bowl with mayonnaise, lemon juice, garlic, parsley, coriander, salt, and pepper, place in the fridge and let marinate overnight.

  • Skewer your marinated chicken, alternating with your veggies until the skewers are full.

  • On a hot BBQ, grill your skewers for 20 minutes, turning every 5 minutes, ensuring an even cook through and evenly color.

  • In a bowl, mix together your shaved fennel, mint leaves, lemon juice, and olive oil.

  • Serve skewers on top of warm flatbread lathered in Undivided Food Co mayonnaise, topped with your fresh herby salad.
