Creamy Crunchy Coleslaw

Creamy, crunchy, and tangy all at once, coleslaw really is the perfect summer side.

INGREDIENTS

3 cups shredded white cabbage
3 cups shredded red cabbage
4 shredded carrots
1 large lime, juiced
1/4 cup GOOD FAT Mayo

Optional Additions
1/2 cup pomegranate seeds
1 teaspoon red chili flakes
Handful of fresh parsley, chopped
1/3 cup cashews chopped

METHOD

  1. In a large bowl toss the cabbage and carrots together

  2. Pour lime juice over cabbage and carrots and toss

  3. Mix in the mayonnaise and salt

  4. Sprinkle in the chili flakes, pomegranate seeds, cashews, and parsley

  5. Toss and serve
