Butter Chicken and Rice Tray Bake

Tray bakes are the new one-pot meal… and this butter chicken and rice bake will not disappoint. This style of cooking requires a little effort up front, but then you can sit back and relax while the oven does it’s thing.⁣

To make this tray bake for four people, joint a whole chicken into breasts (wing attached) and legs, then cut each breast in two and cut the leg to give you two thigh pieces and two drumsticks (alternatively use 8 drumsticks or 8 skin on thigh pieces).

Mix 1 tbsp of butter chicken or curry spice with 2 tbs olive oil, toss the chicken in this and season well.⁣

Sauté 1 diced onion, 2 chopped garlic cloves in a generous amount of coconut oil for a couple of minutes and then add 1 tbsp butter chicken or curry spice, cook for another minute, then add 1 1/2 cups basmati rice, season and mix through the onion to coat the rice. Place the rice mix into a baking tray and tuck in the chicken pieces.⁣

Pour over 500ml of hot GOOD BONES Chicken Bone Broth and 200ml water, cover with baking paper, foil and cook for 30 minutes in a 200°C oven. Remove the baking paper and foil and cook for 10 minutes longer then serve with coriander, lime, some simple cooked veggies and yoghurt if desired.⁣
