Chicken Ceasar Sandwich
A golden, crunchy twist on a Caesar salad, in sandwich form. Think juicy chicken, crispy bacon, creamy Caesar sauce and all the good stuff between good sourdough bread.

Ingredients
For the sandwich:
2 slices of bread (sourdough or ciabatta work great)
1 small piece of bread (for croutons)
1 chicken breast
Olive oil
Salt and pepper
2 rashers of bacon
1 tomato, cut into thick slices
A few leaves of crunchy lettuce (cos or iceberg)
For the Caesar sauce:
2 tbsp GOOD FAT Mayo
2 tbsp grated Parmesan
1 tbsp finely chopped capers
2 anchovy fillets, finely chopped
A few baked croutons, chopped
Cracked black pepper
Method
Make the croutons
Cut a small piece of bread into cubes, toss with olive oil and salt, and bake at 200°C until golden and crisp.Marinate the chicken
Rub the chicken breast with olive oil and cracked pepper. Set aside to marinate while the croutons bake.Make the Caesar sauce
In a small bowl, combine the mayo, grated Parmesan, chopped capers, chopped anchovy, and a few of the chopped croutons. Season with black pepper.Cook the chicken
Pan-fry or grill the marinated chicken until golden on the outside and juicy inside. Slice if needed.Assemble the sandwich
Toast your bread, then spread the Caesar sauce generously on both sides. Add the chicken, crispy bacon, juicy tomato slices, and lettuce.Finish and serve
Press together, cut in half, and enjoy while still warm — like a Caesar salad, only better.
