Herby Brothy Rice
By our GOOD friend Raina Patel, this Herby Brothy Rice is winter comfort food in a bowl. Simple, nourishing and full of flavour, the rice is cooked in GOOD BONES Chicken Bone Broth with lemon peel and finished with fresh herbs for a cosy side that feels as good as it tastes.
Ingredients
500ml GOOD BONES Chicken Bone Broth
250g jasmine rice
1 strip lemon peel
Pinch of salt
Handful of fresh herbs, chopped
We used dill and chives
Method
Rinse the rice under cold water until the water runs clear, then drain well.
Add the rice to a pot with GOOD BONES Chicken Bone Broth, lemon peel and a pinch of salt.
Bring to a boil over medium heat, then cover and reduce the heat to low.
Cook, covered, for 10 to 12 minutes, or until the rice is tender and the broth has absorbed.
Remove from the heat and leave covered for a few minutes to steam.
Remove the lemon peel and fluff the rice with a fork.
Transfer to a serving bowl, add the chopped herbs and toss gently to combine.
Serve warm.
