Moroccan beef stew from Boob To Food

This nourishing one-pot favourite from @boobtofood is loaded with GOOD BONES brothy goodness. Packed with flavour and slow-cooked nutrients, it’s perfect for babies, toddlers, and the whole family.

Ingredients

Stew

  • 1 kg gravy beef

  • 3 tbsp Moroccan spice blend (or use recipe below)

  • 1 tbsp olive oil or cooking oil of choice

  • 1 onion, finely diced

  • 2 carrots, chopped

  • 400 g tin chickpeas, drained

  • 400 g tin diced tomatoes

  • 5 medium potatoes, quartered

  • 750 ml GOOD BONES Beef Broth

  • ½ bunch coriander, stems finely chopped and leaves picked

Optional Additions

  • ½ cup dried apricots, chopped, or 1 tbsp apricot jam

  • 1 tbsp organ powder

Moroccan Spice Blend

  • 1 tbsp ground cumin

  • 1 tbsp sweet paprika

  • 1 tsp ground coriander

  • 1 tsp ground cinnamon

  • ½ tsp ground ginger

  • ½ tsp ground turmeric

  • ½ tsp ground black pepper

Optional Sides

Couscous

  • 2 cups couscous

  • 2 cups GOOD BONES Beef Broth, stock, or water

  • ¼ lemon, juiced

Preserved Lemon Yoghurt

  • ½ cup Greek yoghurt

  • 2 tsp preserved lemon, finely sliced

Oven Method

  1. If making your own spice blend, mix all ingredients in a small bowl. Rub the spice mix into the gravy beef and set aside while you prepare the vegetables.

  2. Heat olive oil in a large casserole dish over medium heat. Brown the beef on all sides, then remove and set aside.

  3. In the same pan, add onion, coriander stems, and a pinch of salt. Sauté for 5 minutes until softened and fragrant.

  4. Add carrots, chickpeas, tomatoes, potatoes, browned beef, GOOD BONES Beef Broth, and apricots or organ powder (if using). Stir well and bring to the boil.

  5. Cover with a lid, reduce heat to low, and simmer for 2½–3 hours until beef is very tender, adding extra water if needed.

  6. If the sauce is too thin at the end, simmer uncovered for 5–10 minutes to thicken.

  7. Stir through coriander leaves before serving and season to taste.

Slow Cooker Method

  1. Brown beef and onions as above, then transfer all ingredients to the slow cooker.

  2. Cook on LOW for 6–7 hours, or until the beef is tender and falling apart.

  3. Stir through coriander leaves before serving.

Brothy Couscous

  1. Heat GOOD BONES Beef Broth in a small saucepan until boiling.

  2. Pour over couscous in a bowl, ensuring it is fully covered.

  3. Cover with a plate and leave for 10 minutes.

  4. Fluff with a fork, then stir through lemon juice.

Lemony Yoghurt

  1. In a small bowl, combine yoghurt and preserved lemon. Stir well.
